Ginger Beer / Ale recipe

I have tried many different recipes and this one produces good results for a non-alcohol beverage that is in my opinion better then you can buy in the store.

  • Fresh ginger root the size of your thumb
  • 1 Lemon squeezed
  • 1 cup sugar
  • 1 teaspoon dry yeast
  • 1 teaspoon cream of tartar
  • 2 Quarts of boiling water

Add sugar, lemon juice to boiling water and reduce till sugar is dissolved. Cool the mixture to luke warm then add yeast & cream of tartar, stirring till it is dissolved. Cover and let stand over night. In the morning pour liquid into sterilized bottles, leave sediment in pan. Let bottles stand at room temperature for 3-4 days until fermented. Chill and enjoy.

On a side note I used plastic beer bottles with reusable twist on caps. Over the 3-4 days that you let the bottles sit at room temperature they will start to pressurize or carbonate, so I check them periodically and if they feel like they are going to blow I let some of the pressure off. Once you put them in the fridge to chill the carbonation process should slow down or completely stop and you shouldn’t have to worry after that.
